This position is responsible for cutting whole fish into fillets for the restaurants. Must be able to fillet Halibut, Lingcod, Rockfish, Tuna, Swordfish, Mahi Mahi, Sturgeon, Black Cod, Albacore, Salmon, and any other species the company buys for filleting. Must be able to fillet fish to standards set by company. Cutters must be able to cut safely and also maintain a steady pace when volume is high. Will be responsible for maintaining a clean, sanitary work station and is responsible for the safe handling and proper storage of product. Cutters may also be called upon perform other tasks as needed that may include but is not limited to making deliveries or pickups, making alder planks, or any other task that is required.
Some high school is required.
This position can be trained internally or have prior experience in a fast-paced commercial fish-cutting facility.
Must be able to speak, read, write and understand English.
Must be able to stand and cut fish for 8 or more hours a day. Must be able to stoop, bend, and reach. Must have finger and hand dexterity to cut fish for the specified period of time. Must be able to lift and handle fish and seafood products weighing up to 75 lbs. Must be able to work quickly and accurately in a 36 to 45 degree Fahrenheit environment.
